OLD FASHIONED RICE PUDDING

Ingredients :

2/3 c. Minute Rice
2 3/4 c. milk
1/3 c. sugar
1 tbsp. butter
1/2 tsp. salt
1/2 tsp. vanilla
1/4 tsp. nutmeg
Cinnamon
1/2 c. raisins

Directions :
First step : Combine Minute Rice, milk & raisins, sugar, butter, salt, vanilla & nutmeg in a buttered 1 quart baking dish.
Second step : Bake in 350 degree oven for 1 h, stirring after 15 mins & again when pudding is done.
Third step : Sprinkle with cinnamon.
Finally step : Serve warm or chilled. Pudding thickens as it stands

    • I agree, Bonnie! My mom didn’t use minute rice, ever! No flavor! You could probably use regular, because of the long cooking time. I’m going to try it.

      • Yes – I made this, years ago – with ‘regular’ rice … only drawback? It took 3 hours in the oven, but was really worth the time, for the ‘deep’ flavor! I don’t make it today, due to the extreme summer temperatures where I now live; oven competes too much with the air conditioning – sigh.

    • This is the best you will ever eat.Makes a lot.
      1 gallon whole milk
      1 1/2 cups of rice(I use River Rice yellow box)
      4 eggs
      1 1/2cup sugar
      1/2 cup cornstarch and pinch of salt
      3 tablespoons vanilla
      Put rice in milk in a large pot over low heat.Stir occasionally
      When rice begins to roll,(takes awhile)let it roll 15 min.
      Set aside,put eggs and vanilla in a bowl,beat well
      Add sugar and cornstarch,mix well
      With a soup ladle,add some of the rice-milk mix to the eggs while beating
      I use a portable mixer,then pour remaining egg mixture into the milk and rice.
      Stir together,it will start to thicken at once,more as it cools
      If you want to add raisins,do it the last 5 min of cooking,as many as you like.
      Sprinkle on Cinn.
      I have tried to cut this in half but the results are not the same,so make it all and share with friends.

  3. My mum use to make her rice pudding with white rice. sugar
    sunshine powder milk.. Pinch salt . Put all dry ingredients in baking dish mix pour boiling hot water over while mixing then sprinkle with nut meg cook in oven .mum never used measures .only juged.

  4. Definitely a yum. A rare treat now but as a youngster with rice as a daily staple it was frequently on the menu. I am not sure instant/quick rice existed then.
